Hearty seasonal vegetables and cooked toor dal are enveloped in a warm, nutty roasted spice paste featuring toasted coconut, cumin, and coriander. A final golden garlic-ghee tadka completes this deeply comforting stew.

Ingredients

  • 1 cup mixed vegetables (carrots, French beans, pumpkin, brinjal, diced)
  • 1/2 cup toor dal (split pigeon peas)
  • 1/2 cup fresh grated coconut
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 tsp coriander seeds
  • 4 dry red chillies
  • 1/2 tsp turmeric powder
  • 4 garlic cloves, finely minced
  • 1 sprig fresh curry leaves
  • 2 tbsp desi ghee
  • 1 small piece tamarind (soaked in 2 tbsp warm water)
  • Salt to taste
  • 2.5 cups water

Method

  1. Pressure-cook the toor dal with 1.5 cups of water and 1/4 tsp turmeric for 3 whistles until soft and creamy; whisk lightly.
  2. In a dry pan, gently roast the coriander seeds, cumin seeds, dry red chillies, and half of the grated coconut (1/4 cup) until golden; grind to a smooth paste with a little water.
  3. In a large saucepan, boil the mixed vegetables in 1 cup of salted water with the remaining turmeric for 8–10 minutes until tender-crisp.
  4. Add the cooked toor dal, tamarind extract, and the ground roasted spice paste to the vegetables.
  5. Stir well, adjust salt, and let the stew simmer on low heat for 5–7 minutes to meld the flavors.
  6. In a separate small skillet, heat the ghee; add mustard seeds and let them splutter.
  7. Add the minced garlic, curry leaves, and the remaining 1/4 cup of grated coconut, frying until the coconut turns nutty golden brown and garlic is crisp.
  8. Pour the sizzling ghee tempering immediately over the simmering vegetable stew and stir gently.

Notes

  • Serving Suggestion: Traditionally served during festive meals alongside Thalia Puttu, steamed rice, and Kumbala Curry.
  • Storage & Make-Ahead: Stores beautifully in the refrigerator for up to 2 days; reheat gently on the stovetop with a splash of warm water.
