Pandhi Curry is the undisputed crown jewel of Kodava hospitality and festive cuisine—a rich, near-black, slow-cooked pork delicacy bursting with peppery heat and the signature sour tang of Kachampuli. Pork belly and shoulder chunks are braised in their own rendered fat with fresh green chillies, ginger, garlic, and onions, then coated in toasted Kartha Masala. The authentic recipe uses no added oil and no coconut, letting the rich pork fat carry the estate spices.

Equipment
- Heavy-bottomed earthen pot (chatti), cast-iron Dutch oven, or heavy vessel
Ingredients
- 1 kg pork (cut into 1.5-inch cubes, with a balanced 70:30 ratio of meat and fat)
- 2 medium onions, coarsely ground or finely crushed
- 8–10 green chillies, slit lengthwise
- 10 garlic cloves, coarsely crushed
- 1-inch fresh ginger, grated
- 2 tbsp Kartha Masala (Kodava dark roasted spice blend)
- 1 tbsp red chilli powder
- 1/2 tsp turmeric powder
- 2 tbsp Kachampuli (wild garcinia vinegar extract)
- 1 tsp salt (to taste)
- 1/2 cup warm water (only as needed)
Method
- Cut the pork into even cubes; place in a bowl and marinate with red chilli powder, turmeric powder, and salt for 30 minutes.
- Place a heavy earthen pot or cast-iron pan over medium heat; add 1/4 cup of water, the coarsely ground onions, slit green chillies, crushed garlic, and ginger.
- Cook the aromatics for 3–4 minutes until their raw sharpness softens and steam rises.
- Add the marinated pork cubes to the pot and mix thoroughly to coat the meat in the aromatics.
- Cover tightly with a lid and cook on low heat for 35–40 minutes; the pork will release its own juices and render its natural fat. Stir occasionally, adding a splash of hot water only if the meat begins to catch at the bottom.
- Once the pork is tender and cooked through, sprinkle the dark Kartha Masala over the simmering curry and stir vigorously to coat every piece.
- Cook uncovered for 5 minutes over medium heat as the gravy darkens to a deep chocolate-bronze.
- Drizzle the Kachampuli directly over the simmering curry, stir thoroughly, and simmer on low for another 3 minutes until the gravy turns glossy, inky-dark, and aromatic.
Notes
- Serving Suggestion: Unrivaled when served hot with steaming Kadambuttu (rice dumplings), Akki Roti, or Paputtu.
- Storage & Make-Ahead: Pandhi Curry improves tremendously with age; making it 24 hours in advance allows the vinegar and spices to deeply penetrate the meat. Keeps refrigerated in a glass or earthen container for up to 6 days.
