The dark, smoky soul of Coorg's culinary identity is Kartha Masala, the signature roasted spice powder that gives curries their deep bronze-black hue and intoxicating aroma. Whole coriander, cumin, mustard, and whole warming spices are slow-roasted in cast iron until deeply toasted and smoky without scorching. Stored in every Kodava kitchen pantry, a single spoonful added toward the end of cooking infuses curries with unmistakable terroir.

  • Heavy cast iron kadai or skillet

Ingredients

  • 1 cup whole coriander seeds
  • 1/2 cup cumin seeds (jeera)
  • 1 tbsp black mustard seeds
  • 1 tsp fenugreek seeds (methi)
  • 2 tbsp whole black peppercorns
  • 1 tbsp whole cloves (lavanga)
  • 2-inch cinnamon stick (broken into small pieces)

Method

  1. Place a heavy cast iron kadai over medium-low heat and add the coriander seeds first.
  2. Roast the coriander seeds patiently, stirring constantly for 5–6 minutes until they transition from golden to a rich, dark chocolate-brown shade.
  3. Add the cumin seeds, black peppercorns, mustard seeds, fenugreek seeds, cloves, and cinnamon pieces to the same pan.
  4. Continue roasting the spice mixture over gentle heat for another 4–5 minutes, stirring steadily so the spices release their essential oils and darken uniformly without turning bitter.
  5. Immediately tip the roasted spices onto a wide dry platter to arrest the cooking process and cool completely.
  6. Transfer the cooled spices to a dry spice grinder and process into a fine, fragrant dark powder.
  7. Store in a clean, airtight glass or ceramic jar.
