Kumbala Curry is a beloved vegetarian staple in Kodagu, prominent on festival menus like Kaveri Shankramana as well as daily breakfast tables. Tender sweet yellow pumpkin is simmered gently until buttery and soft, seasoned with green chillies, turmeric, and dark jaggery, then finished with a classic mustard-chilli tadka. The natural sweetness of the pumpkin pairs harmoniously with spicy gravies and rustic rice breads.

Ingredients

  • 1 kg yellow pumpkin (Kumbala), peeled, deseeded, and cut into 1.5-inch cubes
  • 1 medium onion, sliced thin
  • 3 green chillies, slit lengthwise
  • 1/2 tsp turmeric powder
  • 1 tbsp organic jaggery powder
  • 1 tsp mustard seeds
  • 1 sprig fresh curry leaves
  • 2 dry red chillies, broken
  • 2 tbsp coconut oil
  • 1/2 tsp salt (to taste)
  • 1/2 cup water

Method

  1. Peel and cube the pumpkin into even, bite-sized pieces.
  2. Heat coconut oil in a wide saucepan over medium heat; add mustard seeds, broken dry red chillies, and curry leaves, letting them splutter.
  3. Add the sliced onions and slit green chillies, sautéing for 3–4 minutes until the onions become translucent.
  4. Add the pumpkin cubes, turmeric powder, salt, and 1/2 cup of water, stirring gently to coat with the tempering.
  5. Cover the pan with a tight lid, reduce the heat to medium-low, and let the pumpkin steam for 12–15 minutes until fork-tender and soft.
  6. Uncover, sprinkle the jaggery powder over the pumpkin, and gently toss without breaking the cubes.
  7. Simmer uncovered for another 2–3 minutes until the liquid reduces into a glossy glaze.

Notes

  • Serving Suggestion: Pairs delightfully with breakfast Akki Roti, soft dosas, or as part of a traditional festive thali.
  • Storage & Make-Ahead: Can be prepared a day in advance and stored in the refrigerator for up to 3 days; gently reheat on low heat.
