When the initial monsoon clouds roll over the hills, tightly curled fiddlehead ferns (Therme Toppu) sprout along the banks of natural estate streams and shady valleys. In Therme Toppu Palya, these tender green spirals are gently stir-fried with mustard seeds, dry red chillies, and onions, then lifted with a finishing touch of Kachampuli. Cooked simply without water, the ferns retain their crisp texture and earthy, forest-fresh sweetness.

Equipment

Ingredients
- 1 large bunch fresh fiddlehead ferns (Therme Toppu), cleaned and finely chopped
- 1 medium onion, finely chopped
- 1 tsp black mustard seeds
- 2 dry red chillies, broken
- 1/2 tsp turmeric powder
- 1 tsp Kachampuli (or fresh lime juice)
- 2 tbsp coconut oil
- 1/2 tsp salt (to taste)
Method
- Wash the fiddlehead ferns thoroughly in several changes of cold water, rubbing away any brown papery scales, and finely chop the tender curled heads and stalks.
- Heat coconut oil in a heavy skillet over medium heat; add mustard seeds and let them crackle.
- Add the broken dry red chillies and chopped onions, sautéing for 3–4 minutes until the onions turn soft and translucent.
- Add the chopped fiddlehead ferns, turmeric powder, and salt.
- Toss the greens vigorously for 2 minutes to coat them evenly with the aromatic oil.
- Cover the skillet with a lid, lower the flame to minimum, and let the ferns cook in their own steam for 10–12 minutes, stirring once or twice (do not add water).
- Remove the lid, drizzle Kachampuli or lime juice over the hot greens, and stir-fry uncovered for 1 minute before removing from heat.
Notes
- Serving Suggestion: A classic, cherished breakfast accompaniment with hot Akki Roti or as a side dish for lunch with rice and rasam.
- Storage & Make-Ahead: Best served hot and fresh from the pan. Refrigerate leftovers in an airtight container for up to 24 hours.
