When swollen torrential streams rush through the valleys of Kodagu, local crab hunters trap freshwater mud crabs to prepare Njand Curry. The sweet, succulent crab meat is simmered in a dark, peppery coconut gravy spiced with toasted coriander, cumin, and fiery black pepper. The robust spices cut through the richness of the crab while warming the body against the monsoon chill.

Equipment

  • Large heavy-bottomed earthenware chatti or deep pot

Ingredients

  • 1 kg fresh river crabs (Njand), cleaned, shells removed, and claws cracked
  • 1 cup fresh grated coconut
  • 2 medium onions, finely chopped
  • 6 garlic cloves, minced
  • 1-inch fresh ginger, minced
  • 1 tbsp whole black peppercorns
  • 1 tbsp coriander powder (or whole roasted coriander)
  • 1/2 tsp turmeric powder
  • 1 tbsp thick tamarind paste
  • 2 tbsp coconut oil
  • Salt to taste
  • 1.5 cups water

Method

  1. Clean the crabs thoroughly under running water, discard the apron, scrub the bodies, and gently crack the large claws with a pestle to allow the gravy to penetrate.
  2. In a dry skillet over medium heat, roast the grated coconut, whole black peppercorns, ginger, and garlic until golden and fragrant; grind to a thick, smooth masala paste with 1/2 cup water.
  3. Heat coconut oil in a large deep pot over medium heat; add the chopped onions and sauté for 5 minutes until soft and golden brown.
  4. Add the cleaned crabs, turmeric powder, and salt, tossing well over high heat for 3–4 minutes until the shells begin to blush red.
  5. Pour in the ground coconut-pepper masala paste, tamarind extract, and 1.5 cups of water, stirring gently.
  6. Cover the pot with a lid and simmer over medium-low heat for 15–18 minutes until the crab meat is cooked through and the gravy is thick and fragrant.
  7. Turn off the flame and let the curry rest for 10 minutes before serving.

Notes

  • Serving Suggestion: Best enjoyed hot with steamed rice, hot Akki Roti, or soft Kadambuttu.
  • Storage & Make-Ahead: Like all shellfish, best consumed fresh on the day of preparation. Refrigerate leftovers for up to 24 hours.
