A sweeter, more decadent variation of the Kakkada monsoon tradition, Maddh Payasa blends the striking violet decoction of Maddh Toppu with broken rice, golden jaggery, and rich coconut milk. The herbal, slightly astringent notes of the medicinal plant are smoothed by the sweetness of palm jaggery and the richness of fresh coconut cream. It serves as both an immunity-boosting elixir and a beloved festive dessert.

Ingredients
- 1.5 cups concentrated purple Maddh Toppu extract
- 1/4 cup broken raw rice (or rice grits)
- 1 cup thick freshly extracted coconut milk
- 1/2 cup organic jaggery (melted with 2 tbsp water and strained)
- 1 tbsp desi ghee
- 1/4 tsp green cardamom powder
- 1 tbsp cashew nuts and raisins (optional)
Method
- In a deep saucepan, bring the concentrated purple Maddh Toppu extract to a simmer over medium heat.
- Rinse the broken rice and add it to the simmering purple extract; cook for 12–15 minutes until the rice grains are completely soft and tender.
- Pour in the strained melted jaggery and stir continuously, simmering on low heat for 4–5 minutes until the jaggery blends into the rice.
- Lower the heat to minimum and gently pour in the thick coconut milk and desi ghee, stirring constantly.
- Heat the payasa gently for 2–3 minutes until hot throughout; do not let it boil vigorously once the coconut milk is added to prevent curdling.
- Stir in the cardamom powder (and fried cashews/raisins if using) and turn off the flame.
- Serve warm in dessert bowls.
Notes
- Serving Suggestion: Served warm as a festive sweet during Kakkada Padinett celebrations.
- Storage & Make-Ahead: Best served fresh on the day of cooking. Keep refrigerated for up to 2 days; warm gently over a double boiler or on very low heat.
