Maddh Kulu is an ancient herbal rice preparation consumed exclusively on Kakkada Padinett (the 18th day of the Kodava monsoon month of Kakkada). On this special day, the wild rainforest plant Maddh Toppu (Justicia wynaadensis) is believed to concentrate 18 distinct medicinal remedies in its leaves. The deep indigo-purple leaf decoction is boiled with raw rice, fresh coconut, and dark jaggery to rejuvenate the body against monsoon ailments.

Ingredients
- 1 cup raw rice (preferably local red or unpolished rice)
- 1 large bunch fresh Maddh Toppu (Justicia wynaadensis leaves and tender stems)
- 1/2 cup freshly grated coconut
- 1/2 cup pure jaggery syrup (melted and strained)
- 1/4 tsp green cardamom powder
- 2 liters water (for extracting herbal essence)
- 1/2 cup warm milk (optional, for serving)
Method
- Thoroughly wash the Maddh Toppu leaves and stems in clean water to remove any forest grit.
- Place the herbs in a large pot with 2 liters of water and boil over medium heat for 30 minutes until the liquid turns a rich, deep royal purple.
- Strain the decoction through a fine sieve into another pot, discarding the spent leaves.
- Measure out 3 to 4 cups of the purple decoction, bring it to a boil, and add the rinsed raw rice.
- Cook the rice on medium-low heat until it is soft, slightly overcooked, and thoroughly saturated with the herbal purple color.
- Pour in the strained jaggery syrup and grated coconut, stirring continuously into the hot cooked rice.
- Sprinkle the cardamom powder and simmer on low heat for 5 minutes until the mixture reaches a thick, porridge-like consistency (do not cook dry).
- Ladle into bowls and serve warm, stirred with a splash of milk or a teaspoon of ghee if desired.
Notes
- Serving Suggestion: Enjoyed warm on its own or accompanied by a drizzle of fresh melted ghee.
- Storage & Make-Ahead: Consumed fresh on the festival day. Refrigerate any leftovers for up to 24 hours; warm gently with a splash of milk before serving. Note that the natural herbal pigments may temporarily tint urine a harmless bright orange.
