When the first thunderous monsoon showers soak the fertile soils of Kodagu's coffee estates, wild mushrooms (Kummu / Aal Kummu) sprout overnight beneath towering shade trees. In Kummu Curry, these meaty foraged mushrooms are gently braised in a roasted coconut-coriander gravy sharpened with Kachampuli. Cook the mushrooms briefly to preserve their delicate forest aroma and tender, spongy texture.

Ingredients

  • 500g fresh wild mushrooms (Kummu), cleaned and sliced
  • 1 cup fresh grated coconut
  • 1 medium onion, finely chopped
  • 4 garlic cloves, crushed
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 3 dry red chillies
  • 1/2 tsp turmeric powder
  • 1 tsp Kachampuli (or fresh lime juice)
  • 2 tbsp coconut oil
  • 1/2 tsp salt (to taste)
  • 1 cup water

Method

  1. Gently brush and wipe the wild mushrooms to remove soil, rinse quickly in cold water, pat dry, and slice into thick pieces.
  2. In a dry pan over medium heat, toast the coriander seeds, cumin seeds, dry red chillies, and grated coconut until fragrant and light golden.
  3. Grind the toasted spice mixture with 1/3 cup water to a smooth, thick masala paste.
  4. Heat coconut oil in a heavy pot over medium heat; add chopped onions and crushed garlic, sautéing until soft and fragrant.
  5. Add the sliced mushrooms, turmeric powder, and salt, cooking for 3–4 minutes (the mushrooms will naturally release their juices).
  6. Pour the ground coconut-spice paste into the pot and stir gently to combine.
  7. Add 1 cup of water, bring to a gentle simmer, and cook uncovered for 8–10 minutes until the gravy thickens slightly.
  8. Drizzle Kachampuli over the curry, simmer on low heat for 2 minutes, and turn off the flame.

Notes

  • Serving Suggestion: Exceptional when eaten hot with steamed Kadambuttu, Akki Roti, or freshly prepared Paputtu.
  • Storage & Make-Ahead: Best enjoyed fresh on the day of cooking to savor the delicate aroma of wild mushrooms. Refrigerate leftovers for up to 24 hours.
