When the brief pre-monsoon summer arrives, the forests and estate fringes of Kodagu are laden with Kaad Maange—tiny, fibrous wild mangoes bursting with sweet-sour nectar. In this heritage dish, the mangoes are cooked whole in their skins, absorbing rich jaggery, red chilli heat, and a mustard-curry leaf temper. The authentic way to relish this curry is to suck the luscious sweet-spicy pulp directly off the seed.

Ingredients
- 10–12 small wild mangoes (Kaad Maange), washed thoroughly
- 1/2 cup organic jaggery powder (adjust according to mango tartness)
- 1 tsp mustard seeds
- 1 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1 sprig fresh curry leaves
- 2 tbsp coconut oil
- 1/2 tsp salt (to taste)
- 1.5 cups water
Method
- Wash the small wild mangoes thoroughly; with clean hands, lightly press each mango to loosen the pulp under the skin while keeping them whole.
- Place the whole mangoes in a cooking pot with 1.5 cups of water, red chilli powder, turmeric powder, and salt.
- Bring to a boil over medium heat and cook for 10–12 minutes until the mango skins soften and turn tender.
- Add the jaggery powder, stirring gently so the jaggery dissolves into the cooking liquor and forms a glossy, slightly thick syrup.
- Simmer on low flame for 6–8 minutes, allowing the mangoes to soak in the sweetness.
- In a separate small pan, heat coconut oil; splutter mustard seeds and fry the curry leaves until crisp.
- Pour the aromatic tempering over the simmering mango curry and gently stir.
- Remove from heat and let rest for at least 15 minutes before serving so the sweet-sour flavors harmonize.
