Choute Pachchadi is the cooling counterbalance on every celebratory Kodava thali, especially during summer and wedding feasts. It features Choute, the firm-fleshed local field cucumber, folded into freshly grated coconut, pungent raw garlic, green chillies, and thick home-set curd. Always gently squeeze the salted cucumber to discard excess water so the pachchadi maintains a lush, creamy consistency.

Ingredients
- 1 medium field cucumber (Choute), peeled, deseeded, and finely minced
- 1/2 cup fresh grated coconut
- 6–8 garlic cloves
- 6–7 green chillies
- 1 cup fresh thick curd (yogurt), whisked smooth (or 2 tbsp lemon juice)
- 1/2 tsp salt (to taste)
- For Tempering:
* 2 tbsp coconut oil or cooking oil * 1/4 tsp mustard seeds * 2 dry red chillies, broken * 1 sprig fresh curry leaves * 1 tbsp fresh coriander leaves, finely chopped
Method
- Peel, core, and finely dice the cucumber; lightly sprinkle with a pinch of salt and squeeze out excess liquid.
- In a small chutney blender, grind the grated coconut, raw garlic cloves, green chillies, and salt into a fine, thick paste with 1–2 tbsp water.
- In a ceramic mixing bowl, combine the diced cucumber, ground spiced coconut paste, and whisked curd, folding gently.
- Heat coconut oil in a small tempering pan over medium heat.
- Add mustard seeds and let them splutter vigorously.
- Add the broken dry red chillies, curry leaves, and chopped coriander leaves, frying for 15 seconds until aromatic.
- Pour the crackling tempering immediately over the cucumber mixture.
- Stir gently to incorporate and let rest for 10 minutes before serving.
Notes
- Serving Suggestion: Perfect alongside spicy Pandhi Curry, estate mutton curry (Kuri Kari), or flavored ghee rice and pulav.
- Storage & Make-Ahead: Best served fresh or lightly chilled. Store in the refrigerator for up to 24 hours; do not freeze.
