When the torrential monsoon mist blankets the Western Ghats, wild bamboo shoots emerge, heralding the season for Baimballe Curry. The delicate, fibrous shoots are simmered in a golden roasted coconut gravy ground with cumin and coriander, balancing earthiness with warm spice. Always ensure the harvested shoots are cured in fresh cold water for 48 hours with daily water changes to remove bitterness.

Equipment

  • Deep earthenware pot (chatti) or heavy-bottomed saucepan

Ingredients

  • 500g tender bamboo shoots (Baimballe)
  • 1 cup grated fresh coconut
  • 1 large onion, finely chopped
  • 5–7 garlic cloves
  • 1 tsp cumin seeds
  • 1 tbsp coriander powder (or whole roasted coriander seeds)
  • 1/2 tsp turmeric powder
  • 4 dry red chillies (Byadgi variety preferred)
  • 1 tsp mustard seeds
  • 1 sprig fresh curry leaves
  • 2 tbsp coconut oil
  • Salt to taste
  • 2 cups water (as needed)

Method

  1. Thinly slice the peeled bamboo shoots, submerge in plenty of fresh water for 48 hours (changing the water twice daily), then drain thoroughly.
  2. In a pot, boil the drained shoots in fresh water with 1/2 tsp turmeric and salt for 15 minutes until tender, then drain and set aside.
  3. In a pan, lightly toast the dry red chillies, cumin seeds, coriander powder, and grated coconut until aromatic, then grind with 1/2 cup water to a silky-smooth masala paste.
  4. Heat coconut oil in a deep pot over medium flame; add mustard seeds and let them splutter.
  5. Add chopped onions, crushed garlic, and curry leaves; sauté until the onions turn golden brown.
  6. Add the boiled bamboo shoots and ground coconut masala paste, stirring well for 2 minutes.
  7. Pour in 1.5 to 2 cups of water to achieve a medium-thick curry consistency and bring to a rolling boil.
  8. Lower the heat, cover, and simmer gently for 12–15 minutes until the flavours marry and oil droplets rise to the surface.

Notes

  • Serving Suggestion: Served warm with steamed Kadambuttu, fluffy Paputtu, or hot boiled rice.
  • Storage & Make-Ahead: Tastes even better the next day as the shoots steep in the spiced coconut gravy. Keeps refrigerated for up to 3 days in a covered glass or ceramic container.
