Eating well in Madikeri begins by noticing structure, not hunting one famous dish. Rice is foundational, appearing as flatbread, steamed dumplings, noodles, and cooked grain. Pandhi Curry is the best-known Kodava preparation: pork cooked dark with roasted spices and the tart depth of Kachampuli, a concentrated extract traditionally associated with the fruit of Garcinia gummi-gutta.
